It is with great pleasure that I present to you this page devoted to the language of my native ancestors, the Kadazan Dusun folk of the North Borneo. The Kadazan Dusun languages are such beautiful languages to be left behind… yet, that’s what happened. Many of the new generation nowadays know little about the languages. I hope I can contribute in any way, to place, to grow and to keep the interest of the young generation to learn and understand more of our Kadus Languages. This might be just any page that you can find in the internet, but this is the small thing that I could do to contribute. Let's keep this language live within our souls through music.

Sabah Traditional Recipe: Hinava (Raw Fish Salad)


Hinava is one of the special traditional dish for Kadazan Dusun tribes in Sabah and can be said as the most popular food among the Kadazan-Dusun. It is a dish made ​​from fresh fish meat mixed with seeds of the grated Bambangan seeds, red chillies, ginger, onion, lime cotton and salt. The fish will not be cooked, thus all the raw materials shall be cleaned beforehand. This dish very much resembles Sushi.

There are many different types of fish that can be used, but the fish that are commonly used are the contents of mackerel, and there are also some people who are making use of the shark. Alternatively fill squid or shrimp can also be used for the preparation of this Hinava.

Hivana usually a special meal during Tadau Kaamatan. In addition, it is also a special dish on important occasions such as for wedding, engagement and other.

RECIPE TAKEN FROM HERE


INGREDIENTS:

600g raw tuna or mackerel ( cut into strips)
120 ml lime juice /vinegar
3 to 4 small red shallots, sliced or chopped finely
2 inches young ginger, finely julienned
2 large chilies, cut into fine strips
5 bird’s eye chilies, cut finely (green & red)
1 small bitter gourd (cut into strips &
marinated in salt for few minutes )
Salt & sugar to taste

METHOD:
~ Mix the sliced bitter gourd with salt to reduce its bitterness & rinse with water.
~ Marinate the fish with the lime juice / vinegar for 10 minutes.
~ Mix all ingredients together.
~ Chill in fridge till ready to eat or just left in room temperature, it'll be fine.

Resepi Hinava


600g tuna mentah atau tenggiri (dihiris)
120 ml jus limau / cuka
3-4 bawang merah kecil, dihiris atau dicincang halus
2 inci halia muda, dihiris halus
2 cili besar, dipotong menjadi jalur halus
Cili mata 5 burung, potong halus (hijau & merah)
1 peria kecil (dipotong menjadi jalur &
diperap garam selama beberapa minit)
Garam & gula secukup rasa

KAEDAH:
~ Campurkan peria yang dihiris dengan sedikit garam untuk mengurangkan kepahitan & bilas dengan air.
~ Perap ikan dengan jus limau / cuka selama 10 minit.
~ Campurkan semua bahan bersama-sama.
~ Simpan di dalam peti sejuk atau biarkan di dalam suhu bilik sebelum dihidang.

Glutinous rice
Coconut milk
Sugar

Method:
Wash and cook the rice. Cook coconut milk with the sugar until redish in colour. Put in the cooked rice, mix well. Put in a mould. Serve as preferred.

Cara membuatnya:
Beras dicuci, kemudian dimasak. Ambil santan, masak bersama gula sehingga kemerah-merahan.
Masukkan nasi yang telah dimasak ke dalam kuali yang berisi santan dan gula, kemudian gaulkan sehingga sebati. Masukkan ke dalam acuan (hidangkan mengikut kesukaan).

Ingredients:
Glutinous rice
Rice flour
Wheat flour
Sugar

Method:
Mix the sugar with water. Put in all the 3 types of flour in the sugar mixture. Steam until cooked. Cool it and serve.

Gula digaulkan dengan air hingga sebati.
Masukkan semua tepung ke dalam air
gula tadi kemudian kukus hingga masak.

Ingredient

1 gantang of white rice
10 pieces of sweet yeast
Irik / Kalas leaf
water

Method:
Cook the rice and let it cool. Pound the sweet yeast and mix well with the cooked rice. Leave overnight. Serve.

4. Air secukupnya

Cara-cara Penyediaan:
Beras dimasak kemudian disejukkan.
Tumbuk ragi dan gaulkan dengan nasi hingga sebati.
Biarkan semalaman. Hidangkan

Black glutinous rice
Grated coconut
Sugar
Banana leaf

Method:
Mix all the ingredients until smooth (Not too dilute) Prepare and clean the banana leaf. Wrap the mixture in the banana leaf. Steam until cooked. Serve (Hot and cold)

itu bungkus dahulu dalam kuali hingga masak.
Hidangkan (sejuk atau panas).

Ingredients:
White rice
1 chicken (Clean)
Salt (To taste)
Simpur / Tarap leaf

Method:
Cook the chicken with the white rice and salt to taste. When it is cooked, take out the chicken and tear it into small pieces for the filling. Wrap the rice with the chicken filling in the Simpur / Tarap leaf. Serve.

1 ekor ayam dimasak bersama dengan
beras dan garam secukup rasa.
Setelah masak keluarkan ayam kemudian
carik-carik isi untuk dijadikan inti. Nasi yang dimasak
separuh lembut berintikan isi ayam dibungkus
dengan daun simpur/tarap. Kemudian hidangkan.

bungkus dengan menggunakan daun irik dan kukus sehingga masak. Hidangkan.

Method:
Cook the rice with the coconut milk and enough salt. After the rice is cooked, wrap it in the Silad / Irik leaf. Steam the mixture. Serve.

Method:
Cook the rice with the sweet potato until cooked. Mash the cooked mixture well. Wrap in the Tarap / Irik leaf. Serve.

The rempenyek is a crunchy savoury snack which is basically a batter shaped into a saucer, decorated with peanuts and anchovies, and fried till it turns crispy and golden brown. This addictive, brittle cracker can be found at the tamu markets all around Sabah. It is Sabah's very own answer to potato chips

Ingredients
250g rice flour, sifted
1/2 teaspoon cumin seeds
1/2 teaspoon cumin powder
1/2 teaspoon fennel seeds
1/2 teaspoon fennel powder
1 teaspoon coriander powder
2 teaspoon salt, or to taste
1 teaspoon salt, or to taste
60g cleaned ikan bilis (gutted, deboned and beheaded), soaked and ground
1 teaspoon air kapur (slaked lime solution), optional
500ml thin coconut milk (obtained by adding water to the milk of 1 coconut)
100g peanuts
oil for deep frying

Method
In a mixing bowl, combine all the ingredients. Mix well and season to taste.
Heat the oil in a wok over medium heat. Heat a soup ladle in the hot oil. Spoon some batter - make sure there are nuts in every scoop - into the ladle and lower it into the oil. Cook until fritter is set, remove from oil and drain on paper towels. Repeat until the batter is used up.
Return the rempeyek to the hot oil and deep fry until crisp and golden brown. Alternatively, bake in the oven at 160°C for about 10 minutes. Remove and drain on paper towels. Cool completely before storing in air-tight containers.
Variation: Instead of grinding the ikan bilis, add whole to the batter.

Cara-cara:
Bersihkan dan toskan kacang tanah. Bancuh tepung beras bersama-sama bahan lain. Panaskan minyak atas api yang sederhana besar. Dengan menggunakan acuan tuangkan adunan tadi ke atasnya dan taburkan beberapa biji kacang tanah dan ikan bilis. Apabila agak keperangan, angkat dan toskan tempeyek tadi

Keropok amplang (amplang cracker) which is especially famous in Tawau, is made from Spanish mackerel mixed with tapioca flour and selected spices to bring out a distinctive delicious taste. Amplang Cracker is formed round and fried until crispy before packed in plastic. Amplang Cracker is simply crispy and is suitable to be taken as a snack anywhere and anytime throughout the day.





INGREDIENTS:
300gm wolf-herring
280gm tapioca flour
20gm flour
1 egg
cooking oil 30ml
Salt and sugar to taste

HOW TO COOK:
Boil the fish and take out its content.
Then, mix the take-out contents with the eggs and cooking oil. Mix well.
Then, ddd flour, tapioca flour, salt and sugar.
Knead to form a dough. After that, form into small balls and fry.

BAHAN-BAHAN:

280gm tepung ubi
20gm tepung gandum
1 biji telur
30ml minyak masak

CARA MEMASAK:
Rebuskan ikan dan ambil isinya.
Kemudian, campurkan isi ikan dengan telur dan minyak. Gaul rata.
Masukkan tepung ubi, tepung gandum, garam dan gula secukup rasa.
Uli hingga menjadi doh. Setelah itu, bentuk menjadi bebola kecil dan rebus sehingga masak.
Kemudian, jemur bebola hingga kering.
Apabila ia sudah kering, ia sedia digoreng.
Panaskan minyak dan goreng amplang hingga kembang.
Sedia dinikmati.



Sabah Traditional Recipe: Karataan/Bosou




Bosou or also known as Tonsom is one is one of the traditional side dishes special for ethnic Kadazan-Dusun, Sabah. For tribes from Ranau, it is known as 'tinamba'. Bosou usually produced from fresh water fish. But anchovies and cow meat can also be used.

Ingredients: 
Fresh water fish
Hot cooked rice
Buah pangi (keluak fruit)
salt

Methods:
Clean the fish and drain off the remaining water.
Pound pangi fruit into a powdery substances.
Put the hot rice and fresh water fish in a bowl. Stir briefly and let to cool.
Once cool, add pangi fruit and salt. Mix until well blended.
Put inside bottle or airtight jar.
Only to be eaten after fermented for a couple of weeks.
To enhance the fragrance and its sour flavor, warm it or stir fry before serving.

Pinjaram, penyaram or kuih UFO as some would call it, is a type of local cake that is popularized by the Bajau people. This Mexican hat-shaped cake has a nice, chewy texture with a tantalizing pandan aroma. Excellent to be eaten in front of the TV with a cup of hot black tea or coffee! Perfect to satisfy any sweet-tooth!





Ingredients:
Rice flour
Wheat flour
Sugar
Water
Cooking oil (Mix all the mixture well)

Method:
~Mix the rice flour, wheat flour and sugar with water until smooth. (Not too dilute) Marinate the mixture for 2 hours. Heat the cooking oil in the frying pan and pour the mixture using a mould so that the size of the cakes are the same. Fry until cooked. Serve.

1/2 kg tepung gandum
1/2 kg gula pasir
200 gm gula melaka
500 ml air sejuk
Minyak untuk menggoreng

CARA MENYEDIA­KAN:
1) Ayak tepung beras bersama tepung gandum
2) Masukkan gula pasir dan gaul rata
3) Masukkan gula melaka yang sudah dibancuh dengan air dan tapis.
4)Gaulbersama tepung tadi.Gaul rata
5) Biarkan selama 6 hingga 8 jam barulah digoreng

Kinangkaput is a combination of red and black rice mixed with honey then wrapped in a banana leaf and steamed with coconut milk, it is a delicious way to eat rice.

Ingredients:
Red glutinous rice
Black glutinous rice
Coconut milk
Honey

Method:
Mix the red and black glutinous rice with honey separately. Wrap the mixture in the banana leaf. Steam with the coconut milk until it is cooked. Serve.

Sabah Traditional Recipe: Linompuka / Hinompuka




Hinompuka is a declicious-gooey Kadazan cake made of glutinous rice wrapped in banana leave. To give it flavour variety, one can choose to add either banana or sweet potato into the main ingredient


Ingredients:
Glutinous rice flour
Black rice flour
Malacca sugar
Irik leaf (cut to 8 inches)

Method:
Mix the glutinous rice, Malacca sugar and water together (Not too dilute) Prepare and clean the Irik leaf. Wrap the mixture that has been pepared. Steam the Hinompuka in a steaming pot for 30 – 40 minutes. Serve (Hot or cold)

Daun Pisang (dipotong 8 inci panjang) - di bersihkan
Grated coconut (jika mahu)

Cara membuatnya:
1. Tepung beras pulut, gula melaka, kelapa (grated coconut) dan air digaul sehingga sebati (jangan terlalu cair). Buat macam doh.
2. Sediakan daun pisang yang bersih kemudian bungkus tepung yang digaul tadi.
3. Selepas itu bungkusan dikukus dalam kuali sehingga masak atau selama 30-40 minit.
Hidangkan (sejuk atau panas).
